Sweet Corn Bread with Frozen Corn
A moist, lightly sweet cornbread studded with frozen corn kernels — perfect alongside chili or as a snack.
Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 0.5 cup sugar
- 1 tablespoon baking powder
- 0.5 teaspoon salt
- 1 cup milk
- 2 large eggs
- 0.25 cup unsalted butter — melted
- 1 cup frozen corn kernels — thawed and drained
Method
- Preheat the oven to 400°F (200°C). Grease an 8-inch square baking pan or line with parchment paper.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the milk, eggs, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
- Gently fold the thawed corn kernels into the batter.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 20-25 minutes, until golden brown and a toothpick inserted in the center comes out clean. ⏱ 25 min timer

Notes
If you like extra sweetness, stir in 1/4 cup honey along with the wet ingredients. The frozen corn adds moisture and a pop of sweetness.
