Ingredients

  • 3 ripe bananas (mashed) — medium-sized, very ripe with brown spots
  • 0.5 cup peanut butter — creamy, unsweetened
  • 2 eggs — large
  • 1 tsp vanilla extract
  • 0.25 cup coconut oil (melted) or vegetable oil
  • 1.5 cups whole wheat flour (or all-purpose)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.25 tsp salt

Method

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Mix in the peanut butter, eggs, vanilla extract, and melted oil until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Pour the dry ingredients into the wet mixture and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 50–60 minutes, until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil after 30 minutes. ⏱ 55 min timer
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for natural sweetness. The bread will be soft and moist. Store in an airtight container at room temperature for up to 3 days or refrigerate for longer.
